Butter Beans and Burrata

Ingredients:

2 cups of mixed variety cherry tomatoes

1 shallot

4 cloves of garlic

1 15oz can butter beans or you can use cannellini beans

1/3 cup chopped basil and some leafs for garnish

1t crushed red pepper

2t dried oregano

2t balsamic glaze

Salt and pepper to taste

1 ball of burrata

Instructions:

Dice the shallot and mince the garlic (or cheat like me and use from the jar). Halve the tomatoes. Heat oil in a large pan and fry off the shallot until translucent. Add the garlic and as soon as it starts to color add the tomatoes and spices and balsamic. Once they start to break down add a little water to keep it juicy. When they are nice and saucy get a stick blender and blend until roughly smooth. Drain the butter beans and add them in. Simmer for a couple minutes and then stir in basil. Serve hot with half/third of a ball of burrata per bowl and a good crusty bread.
