Spicy Lentils in the Instant Pot

I went to dinner with a friend a few weeks ago to our favorite Tapas place by his house. We ordered grilled shrimp with lentils and a spicy aioli and it was so good I had to try to replicate at home. Wanting to take the easy way I decided to try in my Instant Pot. I served with pan fried salmon but you can use any seafood (I am sure you could have chicken or beef too).

Ingredients:

1 cup dry black lentils (if you use another color of lentil cooking time will be less)

1 3/4 cup chicken or vegetable stock

1 tsp paprika

1 tsp cumin

1 tsp coriander

1/4 tsp cayenne pepper

1 Serrano chilled seeded and chopped

1 shallot chopped

1 T minced garlic

1 T coconut oil

Aioli:

3 T mayonnaise

1 tsp sriracha

2 dashes of tamarula or hot sauce

Directions:

Turn Instant Pot to sauté and add coconut oil. When hot add shallot and pepper. Cook until translucent or like I like it a bit caramelized. Add garlic and spices and cook for 30 seconds. Add stock and lentils. Give it a good stir and turn on high for 7 minutes. Let it release naturally for 10 minutes then quick release (if you leave longer it can get mushy).

Add a bit of the aioli.

That’s it…super easy!

Serves 4, 159 calories per serving.
