1 Head of Cauliflower
1/4 C Egg Whites or 2 Large Eggs
1/2 C shredded Mozzarella + 1/2 C for topping
1/2 C shredded Parmesan
1t Italian Seasoning
1/4t ground Black Pepper
Pinch of Salt
Marinara Sauce of your choice for dipping
Preheat oven to 375 degrees F.
Rinse cauliflower, remove leaves and cut into florets. In food processor pulse cauliflower to a rice texture.
Place cauliflower in oven proof baking dish and bake for 20 minutes. Remove from oven, place in a cheesecloth lined bowl and let cool for about 15 minutes. Fold towel and squeeze cauliflower as hard as you can to remove all moisture (you may want to do this a few times).
Increase oven temperature to 450 degrees F. Transfer cauliflower to a mixing bowl along with eggs, 1/2 C mozzarella and 1/2 C Parmesan, Italian seasoning, salt and pepper.
Transfer to a parchment or silpat lined baking sheet and flatten into a rectangle approximately 10″x 8″ and 1/4 inch thick.
Bake for 18 minutes, remove from oven and top with remaining 1/2 C Mozzarella and bake for 5 minutes until cheese is golden brown.
Remove from oven, cut into 20 slices and serve warm with marinara dipping sauce.
